Lemon brown rice

Lemon brown rice:

2 small onions finely chopped

1 tbs olive oil

2 1/2 cups brown rice

1/4 cup lemon juice

1 1/2 cups water

2 1/2 cups chicken broth

3/4 tsp salt

grated parmesan to taste

1/4 cup fresh parsley

1/4 cup fresh basil

1.  cook onion and salt for about 5 minutes

2.  add broth, water and lemon juice

bring to a boil, cover and simmer over low heat for about 35 minutes.  add cheese and seasonings and mix well.
